Prototype 6” Mini-Chef — Spalted Maple Burl & Copper
This prototype mini-chef was made from W2 steel, with a differentially hardened blade. This heat treating technique, called a hamon, forces the steel to be very hard along the cutting edge for sharpness and cutting life, while retaining some softness in the spine for overall durability. After acid etching the blade, a beautiful visual effect is revealed in the tonal pattern that meanders along the blade edge!
Being that the hamon process takes quite a bit more time and grace to produce, you won’t find these here at this price in the future.
The mini-chef in use:
This smaller chef's knife is great for the home cook. Rarely do you need more blade when cooking for 1-3 people. It's lighter and more agile than the full sized chef. It takes ups less counter and cutting board space, and it feels more natural in small to medium hands than a larger knife.
The blade profile ground in a high rounded sabre. This gives the durability and cutting consistency of the sabre grind while rounding off the hard edges at the second bevel allowing for easier slicing.
