Western Chef — 7” Cocobolo & brass
This Western Chef’s Knife has a 7” blade made from 0-1 high carbon steel. It’s 3/32” thick at the spine.
The handle is made from Panamanian Cocobolo wood and has a 6-pin design of solid brass. It’s finished in Danish oil.
Carbon steel is known for its Keen and durable edge. This knife will last much longer in between sharpening sessions compared with your typical stainless steel kitchen knives. Carbon steel can form rust if not cared for properly, and various patinas will form after being in contact with specific foods, mainly onion and citrus.
Details on care are widely available and easy to follow. And, it’s well worth it. You’ll want to care for it like a puppy...sleep with it at night and feed it oil.
Overall length: 11”.
Comes with a raw, vegetable-tanned leather sheath/ blade cover with a solid-brass snap. This sheath is meant to be used when transporting the knife to work or out to the cabin for the weekend.
Also incuded is a kit of blade oil and leather conditioner.
