Western Chef’s knife — 6.75” Spalted maple & brass
This Western Chef’s Knife has a 6.75 inch blade made from 0-1 high carbon steel. It’s 5/32” thick at the spine.
The handle is made from stabilized spalted maple and solid brass pins and lanyard tube. Handle is finished in Danish oil.
Please note that this knife’s cutting edge is 6.75 inches long and the blade spine is ever so imperfectly straight. (See final image)
Carbon steel is known for its Keen and durable edge. This knife will last much longer in between sharpening sessions compared with your typical stainless steel kitchen knives. Carbon steel can form rust if not cared for properly, and various patinas will form after being in contact with specific foods, mainly onion and citrus.
Details on care are widely available and easy to follow. And, it’s well worth it. You’ll want to care for it like a puppy...sleep with it at night and feed it oil.

Comes with a raw, vegetable-tanned leather sheath/ blade cover with a solid-brass snap. This sheath is meant to be used when transporting the knife to work or out to the cabin for the weekend.
Also incuded is a kit of blade oil and leather conditioner.
